Meet Chef Paco
Francisco ‘Paco’ Aceves leads the Stonewall Resorts culinary team as executive chef. Chef Aceves continues to hone and evolve the resort’s culinary style by using fresh local ingredients. He has trained under West Virginia’s own culinary innovator Chef Robert Wong and is a 2003 graduate of the Culinary Institute of America.
Additionally, he was the executive chef at one of West Virginia’s most well-know restaurants, The Bridge Road Bistro in Charleston. He has visited the James Beard House the past four years representing Benchmark Hospitality International. Chef Aceves enjoys hiking, the outdoors and looking for ramps in the spring with his kids, wife and dogs.
